Evaluation and Characterization of Alginate Extracted from Brown Seaweed Collected in the Red Sea

Alginates are one of the most important compounds brown seaweeds. These employed in food area, because their rheological properties, such as viscosity, gelling, and stabilizing features dietary fiber source. In this study, five species dominant seaweeds were collected Red Sea (Padina boergesenii, Turbinaria triquetra, Hormophysa cuneiformis, Dictyota ciliolata, Sargassum aquifolium) so to characterize alginate yield its properties. The analysis demonstrated differences among highest was recorded T. triquetra (22.2 ± 0.56% DW), while lowest content observed H. cuneiformis (13.3 0.52% DW). viscosity from alginates varied greatly between species, whereas pH slightly. exhibited a moisture 6.4 13.1%, ash ranged 12.3 20% DW, protein reached values 0.57 1.47% lipid concentration 0.3 3.5% DW.
